Mother’s Day Three-Course Brunch at mar’sel

Acclaimed Chef Fabio Ugoletti and his culinary team present an elegant three-course Mother’s Day menu with breathtaking ocean views at Terranea Resort’s mar’sel. To start, guests can choose from a selection of first-course dishes, including Smoked Salmon Caesar Salad with little gem lettuce, croutons and salmon roe; Pea Soup with green onion, mâche and crab; Asparagus Tips with poached egg, jamón, potato foam and balsamic glaze; Tuna Tartare with cucumber, avocado, tomato and wakame seaweed; or Green Hummus with seasonal crudités and fruit. For the second course, guests may select from Lobster Ravioli with saffron sauce and chervil; Sea Bream Acqua Pazza with mussels, clams, prawns, potato and zucchini; Wagyu Steak with hash browns and piperade; Chicken Cordon Bleu with sautéed potatoes and spinach; or Pappardelle with duck ragù, mushrooms and truffle. The third course features indulgent dessert selections, including Coconut Panna Cotta with fresh strawberries and mango sauce; Flourless Chocolate Cake with raspberry sauce, compote and sorbet; Plum Tarte with a shortcake shell, pastry cream and pistachio gelato; Peach Melba with syrup-poached peaches, vanilla gelato, chocolate sauce and almonds; or Croquembouche with rum chantilly, orange caramel and coffee sauce.
